I always thought that ostrich meat was a fairly funny product when I first saw it introduced at a local restaurant in my area (which is in the North Eastern part of the USA, not exactly ostrich territory). At first I thought it was pretty strange, and I was a bit nervous about ordering it; but it turned out to be really good and not quite what I expected either! It is a really fascinating idea that you proposed to cut fat from your diet, and still be able to eat really good meat. Natural ostrich meat would seem like it would do just the trick. In the USA we are so accustomed to beef (I'm honestly not sure why though, aside from it's availability), but we could learn a thing or two about spreading out our taste buds and eating some different foods. In the case of ostrich meat, I definitely think that is an easy food to get into if you already enjoy beef as it is.
